Onion Soup

A winter evening in Jerusalem, guests coming in from the cold, and a pot of onion soup waiting for them on the table. The soup is sold by the liter and comes with croutons, so everyone scatters as many as they like in their own bowl and gets a crisp bite beside the hot soup.

The order starts at 4 liters, and is recommended for up to 15 participants. It suits a family evening, a gathering of friends, a Shabbat Chatan or any hosting at home in the cold days. The soup is labeled vegan and pareve, so you can serve it to guests who do not eat animal products too. When you order by the liter, it is easy to match the quantity to the event: start with the minimum and add more liters as the guest list grows.

On a hosting table, soup does something cold trays do not: it slows the pace, invites people to sit, and gives guests a reason to stay a bit longer. Serve in bowls or soup cups, and put the croutons in a separate bowl beside the pot.
