Eggplant Lasagna

What happens when you add eggplant slices to lasagna? You get a richer dish with a full, homey flavor. Lasagna sheets, eggplant slices, cream cheeses, cottage cheese and yellow cheese are built in layers, and a rosé sauce covers it all.

The dish is dairy and comes in two sizes, large and small. Cut it into squares and serve hot, with a spatula, so every guest gets a whole square with all the layers. The eggplant gives it softness and depth, and the cheeses keep it juicy. When both lasagnas are served at the same event, you can set them side by side and let guests choose between the classic version and the eggplant version, or taste both.

It is a good choice for a table that should have something beyond the usual lasagna, and for guests who like vegetables in the main dish. You can order it for a family meal, a holiday evening or a gathering at home, and it fits well next to a green salad or Salmon Salad. It is a hot dish that feels homey and dignified at the same time.
