Lentil Salad

Lentils are the base, and on top is built a salad with a little of almost everything: baby leaves, sweet potato cubes, cranberries, red onion, almonds and goat cheese. In every forkful you get something sweet from the sweet potato and cranberries, a gentle sharpness from the onion and crunch from the almonds, and the cheese ties it all together.

The salad arrives ready to serve, and all that is left is to place it in the center of the table with a wide serving spoon. It stands nicely next to hot dishes like lasagna or pasta, and also holds on its own at a light lunch in the office or a family gathering. It comes in two sizes, large and small, so it is easy to fit to a small hosting at home and to a celebration with more guests.

This salad holds the table because it is colorful, filling and feels like a dish on its own, and guests come back to it even after they have filled a plate. Because of the goat cheese, the salad is dairy, and it fits our dairy table exactly.

Is the Lentil Salad dairy?
