Hanukkah Latkes Tray

Sweet potato, potato and carrot latkes, about 30 pieces on the tray, and only on Hanukkah. It is the tray people wait for all year, because latkes at home mean oil, smell and long standing at the pan, and here they arrive ready.

The tray is seasonal and available to order only on Hanukkah. It is marked pareve, so it fits next to cream cheeses and salads from the same menu, and also in a pareve menu. Serve hot, with tongs, and place it in the center of the table beside the candles and songs. The three kinds of vegetables give latkes on one tray that differ from one another. Spread the latkes in a single layer on the tray so they keep crisp edges, and put napkins beside them, because most guests take them by hand.

Latkes suit an office Hanukkah party, a family candle lighting, a party at kindergarten or in class and any holiday gathering. They are what turns an ordinary gathering into a real Hanukkah party, and thirty pieces on one tray let each guest taste more than one.
